What’s Up with Us in January 2024

What We Are Eating Lately

For the month of December, we were spoiled by an amazing meal train after Theo’s surgery fiasco. But when January rolled around, I was eager to get back to cooking our family favorites and having a little more control over our meals. Basketball season also started this month, so that meant more quick meals and kid-friendly fare. Here is what is on the menu this week:

Wednesday- Skillet Pork Tacos

Thursday- Sloppy Joes

Friday- Whole Chicken in Crockpot

Saturday- Spaghetti Squash Lasagna

Sunday- leftovers/grilled cheese + soup

Monday- Pork Roast in crockpot

Tuesday – Chicken Mac and Cheese

What I’m Fondly Remembering

For this prompt, I just went back into my blog archives and picked a picture from January of all the last 8 years. Enjoy this little walk down memory lane! 2015-2023. It’s true- the days are long (SO LONG) but the years are short (SO SHORT!).

Something I’m Loving

This is so strange, but I recently started to just drink a mug of hot water. In these cold and dreary months, I often want a hot drink, but I don’t really want to drink tea or coffee…so a mug of hot water is perfect.

What We Have Been Doing This Month…

So much! We hit the ground running back into the school/homeschool days routine. I will admit that it has been a bit rough with lots of tears and angst and emotions. We have also enjoyed our first round of sports in our family. The first of many, I’m sure! We attended two baby showers (for the same person haha- one a “framily” party, and the other a more formal church shower). We have enjoyed lots of indoor read aloud and creative play time, and a few hours of outside in the snow and cold play time. I signed up for a half marathon and have begun my training runs AND we had a fun week of COVID. Our Christmas chicks in the incubator also hatched! It has been a fun and full month!

Currently watching

We finally got a decent bedtime routine down, so Theo and I have been able to sit down and watch a show a couple nights a week. We currently enjoy mindless farm shows, so we started watching this one on Disney+.

What I’m Looking Forward To Next Month…

Listen- winter is hard. Next month is February and this time of year always drags for me. Next month we have lots of basketball games, a couple Valentines parties, a winter family reunion Up North and all the ins and outs of life with four busy kids! We have so much to look forward to, but I will also be honest and say that I’m SO READY to get through February and move onto the spring months. Here’s to keeping on going, even when life feels dreary and blah and the only option is to really put just one foot in front of the next.
